I want to filter assets based on a custom date field. The specific date option allows me to use “before” as an operator but then I have to pick a specific date. I want it to be “before today”. This option doesn’t seem possible in the “moving date ranges” either.

You can’t do that specifically, currently.
You can probably create a custom view, use the “Last X Days” selection on your custom date field with some arbitrary number for “X” in your view settings, but that may include “Today” as well.
I’ve always found it pretty upsetting that the most basic functions you’d expect to be there, such as this one, are not present.
