I would like to be able to run a report to see dates that each device (especially when multiple devices are involved) was assigned. It would be helpful in determining which are loaners, and identifying problems.

Currently, you are unable to pull that data. There is an idea in our Idea Exchange about being able to pull reports that show multiple devices. Please go upvote and comment on this idea!
